Saturday brunch

I saw this great idea of using capsicum rings for eggs which I saved to Pinterest.Of course their pic is so much prettier than mine lol, but I know mine tasted delicious!

In the top photos you can see the cheese I added first, then cracked in the egg. when I flipped it you can see the golden cheese chunks. Mmmm, these were pure bliss with a bit of hot sauce on top.

Next time I will sit them on grilled eggplant rounds and caramelised onions on top for more veggie goodness.
Maybe next time I'll take a pretty picture too.
